Aloo Gobi
Aloo Gobi is a popular Indian vegetarian dish made with potatoes (aloo) and cauliflower (gobi), seasoned with spices.

Preparation
Step 1
Heat oil in a pan and add cumin seeds. Once they splutter, add onion, garlic, and ginger. Sauté until golden.
Step 2
Add tomatoes, turmeric, garam masala, coriander powder, and salt. Cook until tomatoes are soft.
Step 3
Add potatoes and cauliflower. Mix to coat with the spices.
Step 4
Cover and cook on low heat until vegetables are tender, stirring occasionally.
Step 5
Garnish with cilantro before serving.
