Aloo Paratha is a popular Indian flatbread stuffed with spiced mashed potatoes.
In a bowl, mix flour and a pinch of salt. Add water gradually to form a soft dough. Set aside.
In another bowl, mix mashed potatoes, onion, green chilies, cumin seeds, garam masala, turmeric, salt, and cilantro.
Divide the dough and potato mixture into equal portions. Roll out a dough ball, place potato mixture in the center, and fold the dough over the filling.
Roll out the stuffed dough ball gently.
Heat a griddle and cook the paratha with ghee or oil until golden brown on both sides.
