Beef Bourguignon
Beef Bourguignon is a classic French stew made with beef braised in red wine with onions, mushrooms, and bacon.

Preparation
Step 1
Preheat oven to 325°F (160°C).
Step 2
In a large pot, cook bacon until crisp and set aside.
Step 3
Brown beef cubes in bacon fat and set aside.
Step 4
In the same pot, sauté onions, carrots, and garlic until tender.
Step 5
Add flour and tomato paste, cooking for 2 minutes.
Step 6
Add wine, beef broth, bay leaf, thyme, and bring to a boil.
Step 7
Return beef and bacon to the pot.
Step 8
Cover and transfer to oven, cooking for 2.5-3 hours.
Step 9
In a skillet, sauté mushrooms in butter and olive oil, then add to stew before serving.
