Beet Salad is a refreshing and colorful dish made with roasted beets, fresh greens, and a tangy dressing.
Preheat oven to 400°F (200°C).
Wrap beets in foil and roast for 45-60 minutes until tender.
Peel and slice roasted beets.
In a bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
Arrange mixed greens on a plate.
Top with sliced beets, goat cheese, and toasted walnuts.
Drizzle with dressing before serving.
