Blini are small, Russian pancakes made from a yeasted batter. They are typically served with sour cream and caviar or smoked salmon.

Preparation

Step 1

In a bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until frothy.

Step 2

In another bowl, whisk together flours, salt, and milk.

Step 3

Add yeast mixture, eggs, and melted butter to the flour mixture. Mix until smooth.

Step 4

Cover the batter and let it rise in a warm place for 1 hour.

Step 5

Heat a non-stick skillet over medium heat and lightly grease.

Step 6

Pour small amounts of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.

Step 7

Serve warm with sour cream and caviar.
