Bourguignon
Bourguignon, or Beef Bourguignon, is a classic French stew made with beef braised in red wine, typically served with vegetables and mushrooms.
Preparation
Step 1
Toss beef cubes in flour to coat.
Step 2
Heat olive oil in a large pot and brown beef cubes on all sides.
Step 3
Add onion, carrots, and garlic, and cook until vegetables are softened.
Step 4
Stir in tomato paste and cook for 2 minutes.
Step 5
Add red wine, beef broth, thyme, and bay leaf. Bring to a simmer.
Step 6
Cover and cook on low heat for 2 hours, or until beef is tender.
Step 7
Add mushrooms and cook for an additional 30 minutes.
Step 8
Season with salt and black pepper to taste before serving.
