Brisket
Brisket is a cut of beef that is slow-cooked or braised until tender, often seasoned with a dry rub or cooked with vegetables.
Preparation
Step 1
Preheat oven to 300°F (150°C).
Step 2
Season brisket with salt and black pepper.
Step 3
Heat olive oil in a large pot or Dutch oven over medium heat.
Step 4
Brown brisket on all sides, then remove from the pot.
Step 5
Add onions, garlic, carrots, and celery to the pot and cook until softened.
Step 6
Stir in tomato paste and cook for 2 minutes.
Step 7
Add beef broth, red wine, thyme, and bay leaf. Bring to a simmer.
Step 8
Return brisket to the pot, cover, and transfer to the oven.
Step 9
Cook for 3-4 hours, or until brisket is tender.
Step 10
Let rest before slicing and serving.
