Cacciatore
Cacciatore is an Italian stew made with chicken or other meats, simmered in a savory tomato sauce with vegetables and herbs.
Preparation
Step 1
Heat olive oil in a large pot over medium heat. Add chicken pieces and brown on all sides.
Step 2
Remove chicken and set aside. In the same pot, add onion and garlic, and cook until softened.
Step 3
Add bell pepper and mushrooms, and cook for 5 minutes.
Step 4
Stir in tomatoes, chicken broth, white wine, oregano, basil, salt, and black pepper.
Step 5
Return chicken to the pot, cover, and simmer for 30-40 minutes until chicken is cooked through.
Step 6
Garnish with chopped parsley before serving.
