Cacio e Pepe
Cacio e Pepe is a classic Roman pasta dish made with just three ingredients: pasta, Pecorino Romano cheese, and black pepper.
Preparation
Step 1
Cook spaghetti in salted boiling water until al dente.
Step 2
While pasta cooks, toast black pepper in a skillet over medium heat until fragrant.
Step 3
Reserve 1/2 cup pasta cooking water, then drain pasta.
Step 4
Return pasta to the pot, add cheese and a bit of reserved pasta water, stirring to create a creamy sauce.
Step 5
Stir in toasted black pepper and butter if using.
Step 6
Serve immediately, garnished with extra cheese and pepper if desired.
