Caponata
Caponata is a Sicilian eggplant dish made with a mix of eggplant, tomatoes, celery, olives, and capers, cooked in a sweet and sour sauce.
Preparation
Step 1
Heat olive oil in a large skillet over medium heat. Add onion and celery, and cook until softened.
Step 2
Add eggplant and bell pepper, and cook until eggplant is tender.
Step 3
Stir in tomatoes, olives, capers, vinegar, and sugar. Cook for another 10 minutes.
Step 4
Season with salt and black pepper, and garnish with chopped basil before serving.
