Chicken Fricassée is a French dish where chicken is braised in a creamy white sauce with mushrooms, onions, and sometimes white wine.
Heat olive oil in a large pot over medium heat. Brown chicken pieces on all sides and set aside.
In the same pot, add onion and mushrooms. Cook until softened.
Sprinkle flour over vegetables and cook for 1-2 minutes.
Gradually stir in white wine and chicken broth. Bring to a simmer.
Return chicken to the pot, cover, and simmer for 30-40 minutes until chicken is cooked through.
Stir in heavy cream and cook for an additional 5 minutes. Season with salt and black pepper to taste.
Garnish with chopped parsley before serving.
