Preparation
Step 1
Heat vegetable oil in a large pan over medium heat. Add onion, garlic, and ginger, and cook until softened.

Stir in curry powder and cook for 1 minute.

Step 4
Add diced chicken or tofu and mixed vegetables. Simmer until chicken is cooked through or tofu is heated.
Step 5
