Dulce de Leche Cheesecake is a rich and creamy dessert with a luscious caramel flavor. It combines the smooth texture of cheesecake with the sweet, caramelized taste of dulce de leche.
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
In a large bowl, beat cream cheese and sugar until smooth. Add dulce de leche and mix until combined.
Add eggs one at a time, beating well after each addition. Mix in sour cream and vanilla extract.
Pour batter over crust in the pan. Bake for 60-70 minutes, until set but still slightly jiggly in the center.
Cool completely, then refrigerate for at least 4 hours before removing from pan and serving.
