Eggplant Parmesan
Eggplant Parmesan is an Italian dish where slices of breaded eggplant are layered with marinara sauce and cheese, then baked until bubbly and golden.
Preparation
Step 1
Preheat oven to 375°F (190°C). Sprinkle eggplant slices with salt and let sit for 30 minutes. Rinse and pat dry.
Step 2
Dredge eggplant slices in flour, dip in beaten eggs, then coat with breadcrumbs.
Step 3
Heat olive oil in a skillet and fry eggplant slices until golden brown on both sides. Drain on paper towels.
Step 4
In a baking dish, spread a layer of marinara sauce, then layer fried eggplant, more sauce, and mozzarella cheese. Repeat layers and top with Parmesan cheese.
Step 5
Bake for 25-30 minutes until cheese is melted and bubbly. Garnish with fresh basil before serving.
