Enchiladas are a classic Mexican dish consisting of rolled tortillas filled with meat, cheese, or beans, covered in a rich chili sauce, and baked until bubbly.
Preheat oven to 375°F (190°C). Heat tortillas in a skillet until soft.
Spread a small amount of enchilada sauce in the bottom of a baking dish.
Fill each tortilla with chicken or beef, roll up, and place seam-side down in the dish.
Pour remaining enchilada sauce over the rolled tortillas and top with cheese.
Bake for 20-25 minutes until cheese is melted and bubbly. Garnish with onions and cilantro before serving.
