Gazpacho
Gazpacho is a refreshing Spanish cold soup made from blended tomatoes, cucumbers, and peppers. It's perfect for a light and cooling summer dish.
Preparation
Step 1
In a blender, combine tomatoes, cucumber, bell peppers, red onion, and garlic. Blend until smooth.
Step 2
Add red wine vinegar and olive oil. Blend again to combine.
Step 3
Season with salt and pepper to taste.
Step 4
Chill in the refrigerator for at least 2 hours before serving.
Step 5
Garnish with fresh basil if desired.
