Jollof Rice
Jollof Rice is a popular West African dish made with rice, tomatoes, and spices. It is often served with grilled meats or vegetables.
Preparation
Step 1
Heat oil in a large pot over medium heat. Sauté onion, bell pepper, and garlic until softened.
Step 2
Add tomatoes, tomato paste, and spices. Cook for 5 minutes.
Step 3
Add rice and stir to coat with the tomato mixture.
Step 4
Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
