Kimchi
Kimchi is a traditional Korean fermented vegetable dish, often made with cabbage and radishes, and seasoned with garlic, ginger, and chili peppers.
Preparation
Step 1
Place cabbage in a large bowl and sprinkle with sea salt. Toss and let sit for 1-2 hours.
Step 2
Rinse cabbage thoroughly and drain. Combine water, sugar, garlic, ginger, fish sauce, and red pepper flakes to make the seasoning paste.
Step 3
Toss cabbage with seasoning paste and green onions.
Step 4
Pack cabbage mixture into jars, pressing down to remove air bubbles. Seal and let ferment at room temperature for 1-2 days, then refrigerate.
