Lemon Meringue Pie is a classic dessert featuring a tart lemon filling topped with a sweet and fluffy meringue.
Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a pie dish.
Bake crust for 10 minutes. Remove from oven and let cool.
In a saucepan, mix sugar, cornstarch, and salt. Gradually add water and cook over medium heat until thickened. Stir in beaten egg yolks, lemon juice, and butter. Cook for another 2 minutes.
Pour filling into cooled crust.
For the meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Spread meringue over lemon filling.
Bake for 10-12 minutes, or until meringue is golden brown. Let cool before serving.
