Lentil Soup
Lentil Soup is a hearty and nutritious dish made with lentils, vegetables, and spices, simmered to perfection.
Preparation
Step 1
Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic, and cook until vegetables are tender.
Step 2
Add lentils, diced tomatoes, broth, cumin, paprika, salt, and pepper. Bring to a boil.
Step 3
Reduce heat and simmer for 30-40 minutes, or until lentils are tender.
Step 4
Stir in spinach or kale if using, and cook for an additional 5 minutes. Serve warm.
