Lobster Bisque
Lobster Bisque is a creamy and luxurious soup made with lobster meat, cream, and a blend of aromatic spices.
Preparation
Step 1
Cook lobster tails in boiling water for 5-7 minutes. Remove meat from shells and chop into small pieces.
Step 2
In a pot, melt butter and cook onion and garlic until softened. Stir in flour and cook for 2 minutes.
Step 3
Gradually add broth, stirring constantly. Add tomato paste, bay leaf, thyme, salt, and pepper. Bring to a simmer.
Step 4
Add lobster meat and cook for 10 minutes. Stir in heavy cream and brandy, if using. Simmer for another 5 minutes.
Step 5
Remove bay leaf, and garnish with parsley before serving.
