Mediterranean Quinoa Salad is a fresh and light salad made with quinoa, vegetables, and a tangy lemon vinaigrette.

Preparation
Step 1
Rinse quinoa under cold water. Cook quinoa in water according to package instructions. Let cool.
Step 2
In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
Step 3
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Step 4
Pour dressing over salad and toss to combine. Serve chilled or at room temperature.
