Minestrone Soup
Minestrone Soup is a hearty Italian vegetable soup made with a variety of fresh vegetables and beans in a tomato-based broth.
Preparation
Step 1
Heat olive oil in a large pot. Add onion and garlic, and cook until softened.
Step 2
Add carrots and celery, and cook for 5 minutes.
Step 3
Stir in zucchini, green beans, diced tomatoes, vegetable broth, and kidney beans.
Step 4
Bring to a boil, then reduce heat and simmer for 20 minutes.
Step 5
Add pasta and cook until tender. Stir in basil and season with salt and pepper.
Step 6
Serve hot, topped with Parmesan cheese if desired.
