Mushroom Soup
Mushroom Soup is a creamy and flavorful soup made with mushrooms, cream, and seasonings.
Preparation
Step 1
In a large pot, heat olive oil and cook onion and garlic until softened.
Step 2
Add mushrooms and cook until they release their moisture and become tender.
Step 3
Pour in vegetable broth and bring to a simmer. Cook for 15 minutes.
Step 4
Use an immersion blender to blend the soup until smooth. Stir in heavy cream and cook for another 5 minutes.
Step 5
Season with salt, pepper, and parsley before serving.
