Paella
Paella is a traditional Spanish rice dish cooked with a variety of seafood, meats, and vegetables.
Preparation
Step 1
Heat olive oil in a large paella pan or skillet. Cook onion and garlic until softened.
Step 2
Add bell pepper and tomatoes, cooking for 5 minutes.
Step 3
Stir in rice and cook for 2 minutes. Add chicken broth, white wine, paprika, and saffron. Bring to a simmer.
Step 4
Cook for 15 minutes, until rice is tender and most of the liquid is absorbed.
Step 5
Stir in peas, shrimp, mussels, and chicken. Cook for an additional 5 minutes, until heated through.
Step 6
Garnish with parsley and serve with lemon wedges.
