Panzanella
Panzanella is a Tuscan bread salad made with chunks of stale bread and fresh vegetables, dressed with olive oil and vinegar.
Preparation
Step 1
Toast the bread cubes in the oven at 375°F (190°C) until crispy, about 10 minutes.
Step 2
In a large bowl, combine the toasted bread, cherry tomatoes, cucumber, red onion, and basil.
Step 3
In a small bowl, whisk together red wine vinegar, olive oil, salt, and pepper.
Step 4
Pour the dressing over the salad and toss to combine. Let sit for at least 30 minutes before serving.
