Pineapple Upside-Down Cake
Pineapple Upside-Down Cake is a moist cake topped with caramelized pineapple and cherries.
Preparation
Step 1
Preheat oven to 350°F (175°C).
Step 2
In a skillet, melt 1/4 cup butter and stir in brown sugar. Pour into the bottom of a cake pan.
Step 3
Arrange pineapple slices and cherries on top of the caramel mixture.
Step 4
In a bowl, mix flour, baking powder, and salt. In another bowl, cream 1/2 cup butter and sugar until light and fluffy. Beat in eggs and vanilla.
Step 5
Add dry ingredients and milk to the butter mixture, mixing until smooth. Pour over the pineapple in the cake pan.
Step 6
Bake for 35-40 minutes. Let cool slightly before inverting onto a plate.
