Quinoa Salad is a light and nutritious salad featuring cooked quinoa and a variety of fresh vegetables.
Preparation
Step 1
Rinse quinoa under cold water. Cook in a saucepan with 2 cups of water according to package instructions.
Step 2
Let quinoa cool. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and basil.
Step 3
Whisk together olive oil, lemon juice, salt, and pepper. Pour over salad and toss to combine.
