Risotto Primavera
Risotto Primavera is a vibrant and creamy risotto loaded with fresh vegetables, perfect for a light and satisfying meal.
Preparation
Step 1
In a saucepan, heat broth and keep warm.
Step 2
In a separate pot, heat olive oil and sauté onions until translucent.
Step 3
Add Arborio rice and cook, stirring constantly, until lightly toasted.
Step 4
Pour in white wine and cook until absorbed.
Step 5
Begin adding warm broth to the rice, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding more.
Step 6
Add vegetables halfway through cooking. Continue until rice is creamy and vegetables are tender, about 18-20 minutes. Stir in Parmesan cheese and season with salt and pepper.
