Preparation
Step 1
Preheat oven to 400°F (200°C).
Step 2
Toss beet wedges with olive oil, salt, and pepper. Spread on a baking sheet.
Step 3
Roast for 30-35 minutes, until tender. Let cool.
Step 4
In a salad bowl, combine mixed greens, roasted beets, goat cheese, and walnuts.
Step 5
