Preparation
Step 1
Preheat oven to 400°F (200°C).
Step 2
Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Roast for 30-35 minutes.
Step 3
Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
Step 4
Squeeze roasted garlic cloves from their skins into a bowl.
Step 5
Mash potatoes with garlic, milk, and butter until smooth. Season with salt and pepper.
