Thai Red Curry is a rich and spicy curry made with red curry paste, coconut milk, and various vegetables or meats.

Preparation
Step 1
Heat oil in a pan and sauté red curry paste for 1 minute.
Step 2
Add coconut milk and bring to a simmer.
Step 3
Add bell peppers, bamboo shoots, and Thai eggplant. Cook until vegetables are tender.
Step 4
Stir in fish sauce and brown sugar. Adjust seasoning to taste.
Step 5
Garnish with fresh basil before serving.
