Vegetable Lasagna
Vegetable Lasagna is a hearty and nutritious variation of classic lasagna, featuring layers of vegetables, cheese, and pasta.

Preparation
Step 1
Preheat oven to 375°F (190°C).
Step 2
Cook lasagna noodles according to package instructions. Drain and set aside.
Step 3
Heat olive oil in a pan and sauté mushrooms, bell peppers, and zucchini until tender.
Step 4
In a baking dish, spread a layer of marinara sauce. Add a layer of noodles, followed by ricotta cheese, sautéed vegetables, and mozzarella cheese.
Step 5
Repeat layers and top with Parmesan cheese.
Step 6
Bake for 30-35 minutes until bubbly and golden.
