White Chocolate Raspberry Cheesecake is a creamy cheesecake with a sweet and tangy raspberry swirl and a white chocolate flavor.
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
In a bowl, beat cream cheese and sugar until smooth. Melt white chocolate and mix into cream cheese mixture.
Add eggs, one at a time, beating well after each addition. Mix in sour cream and vanilla.
Pour filling over crust. Drop raspberries on top and swirl with a knife.
Bake for 55-60 minutes, until set. Let cool before removing from pan.
