Zucchini Lasagna
Zucchini Lasagna is a low-carb alternative to traditional lasagna, using zucchini slices in place of pasta sheets, layered with meat sauce and cheese.


Preparation
Step 1
Preheat oven to 375°F (190°C).
Step 2
In a skillet, heat olive oil and cook ground meat with onion and garlic until browned. Stir in marinara sauce.
Step 3
In a bowl, mix ricotta cheese, egg, salt, and pepper.
Step 4
Layer zucchini slices in a baking dish, followed by meat sauce, ricotta mixture, and mozzarella cheese. Repeat layers.
Step 5
Top with Parmesan cheese.
Step 6
Bake for 30-35 minutes until bubbly and golden.
