Tallahassee's outpost of the Florida-grown smokehouse sits on Thomasville Road, under three miles from the Florida State campus, which is no accident: founder John Rivers is an alumnus. It was the chain's ninth restaurant and runs the same way as the rest, counter service, trays, brisket as the headline act. Signature Angus brisket anchors a board covering twelve-hour pulled pork, burnt ends, Texas sausage, smoked chicken and St. Louis ribs, by the sandwich or the platter. Sides are proudly Southern; the sweets case carries Texas sheet cake and coconut bombs. Barbecue without any ceremony, and none the worse for it.
