The fifth 4 Rivers smokehouse and the first the family opened in a college town, sitting in Butler Plaza a short drive from the University of Florida. The format is tray and counter service, and the brisket does the talking: Angus, wet-aged thirty days, smoked eighteen hours, hand-sliced to order. Around it come twelve-hour pulled pork, burnt ends, smoked turkey, Texas sausage and St. Louis ribs, on one-meat or two-meat platters. Sides are the Southern canon done straight, and the bakery case finishes with Texas sheet cake or a coconut bomb. Open daily from eleven. Simple food, taken very seriously.
