Arthur Abbott worked out his frozen custard recipe on the Eastern Seaboard carnival circuit in 1902 and set down a permanent stand in Rochester in 1926. The secret recipe is still guarded. The Merritt Island shop on North Courtenay Parkway runs the same playbook: vanilla, chocolate and chocolate almond always on, a flavour of the day rotating beside them through black raspberry, pistachio pineapple and cotton candy. Cones come plain, homemade waffle or dipped. Beyond that sit banana splits, brownie sundaes, flurries, malts, floats, custard cakes and pies. The Turtle, created in 1981, layers Spanish peanuts, fudge and dark chocolate.
