AHU MAR – Restaurant

Wood smoke is the organising idea at this Brickell dining room inside the Dua Miami, where open fire grills and a wood-burning oven do most of the cooking. The kitchen works from Italian foundations and lets the oven finish the argument: blistered Margherita and Ortolana pizzas, vegetable-forward plates that come off the fire with real char, grilled dishes built around smoke rather than sauce. It runs long hours, from early breakfast through a bar that fills in the late afternoon and on into dinner. Diners talk about the crust and about the char. Hotel address, but not a hotel restaurant.
