Aji Limon Ceviche y Carbon belongs to a family-run Peruvian group in southwest Florida that cooks from recipes handed down through generations and plates them in portions few people finish. Ceviche comes with fish, shrimp or both. Around it sit lomo saltado, aji de gallina in its yellow chili cream, anticuchos de corazon skewered with potato and corn, tallarin saltado, jalea mixta and arroz chaufa with seafood. Service runs late morning through evening, seven days. Guests keep citing the ceviche and the value. Unfussy, generous Peruvian cooking.
