Breakfast is the anchor: calentado plates with steak or lomo, the omelette Paisa, a desayuno tipico built around carne asada. Later the kitchen turns to sancocho de costilla, ajiaco and sopa de mondongo, then a longer run of pargo frito, mojarra frita, cazuela de mariscos, camarones al ajillo and bistec a caballo. Snacks stay Colombian and unfussy: salchipapas, chicharron, morcilla, tostones con hogao, arepa con queso. Regulars talk about how fast the plates land and how far the money goes.
