Michael Beltran's Coconut Grove dining room holds a Michelin star and makes its case nightly from half past five. The cooking runs Cuban heritage through classical French technique: a caviar pastelito to start, foie gras with plantain canele and sour orange caramel, an amberjack crudo, tuna conserva, a tamal filled with braised rabbit, chivo guisado folded into agnolotti. Turbot and venison hold the centre, and the duck press turns dinner into theatre. Pastrami-style short rib, flan, a plantain tarte tatin and the house sundae close it out.
