AVIV – Restaurant

Israeli cooking with a Tel Aviv pulse, set inside 1 Hotel South Beach on Collins Avenue. Aviv comes from chef Michael Solomonov and Steve Cook, multi-time James Beard Award winners, and the kitchen builds from hummus: tehina whipped with herbs, Turkish with brown butter and urfa, Yerushalmi with ground beef and pine nuts, all mopped up with house saluf bread. Salatim arrive as beets, cabbage with sumac onions, twice-cooked eggplant. From the coals come pargiyot with shipka tehina, kofte cut with charred corn, beef shishlik and za'atar chicken. Breakfast runs daily, dinner nightly; the kitchen fries entirely without seed oils.
