Breakfast here is participatory: eight griddle tables let you pour your own batter and cook your own pancakes, which is either the best or the worst idea you have heard today. Southern cooking anchors the rest, built on Florida sourcing — pork smoked in house, local shrimp, alligator processed nearby, produce from multi-generational family growers. Melbourne has two rooms, the original downtown one small and intimate, the Wickham Road location bigger with a patio and cornhole. Both open eight to two daily, first come first served, no reservations. Pre-made pancakes exist for the less adventurous. Get there early on weekends.
