Cuban cooking done fast and done properly, from a counter on North Orange Avenue that opens at seven in the morning and runs late into the evening. The Cuban sandwich is the benchmark, pressed with sweet ham, roast pork, Swiss cheese and pickles, but the pan con lechon and the pan con bistec have their own loyalists. Bowls arrive over rice and black beans with sweet plantains alongside; plates bring Spanish baked chicken, picadillo or Havana pork. Ham croquetas, papas rellenas and empanadas fill the gaps. The coffee is made Cuban-style and sweet by default. Order it exactly that way.
