Two brothers and a 1968 Airstream on Destin Harbor turned into a downtown Fort Walton Beach storefront in 2013, and the formula never changed. Pick a vessel: twelve-inch burrito, three soft tacos, quesadilla, nachos, taco salad in a fried tortilla bowl. Pick a protein, with chicken slow cooked six hours, steak eight, ground sirloin, ginger-marinated tempeh, grilled shrimp or fish. Then pick a style. Baja brings red cabbage, pineapple salsa and lime; chipotle, BBQ and southwest go their own ways. Salsas, guacamole and sauces are made daily. No microwave in the building. Weekday happy hour, craft beer, and house margaritas.
