The kitchen looks to Mexico City and then updates it: queso blanco with poblano, spinach and artichoke, beef tamales under tomatillo sauce and queso fresco, ahi tuna tacos with ginger slaw and chipotle aioli, ceviche of lime-cured fish and shrimp, chicken and skirt steak fajita burritos, chimichanga de pollo in chipotle wine sauce.
