Mofongo is the centrepiece: plantain, yuca or trifongo mashed and stuffed with chicken, chicharron, longaniza, shrimp, churrasco or lobster, then dressed in garlic or creole sauce. Around it sit croquetas, queso frito with guava, sorullitos de maiz, bolitas de yuca, tostones rellenos and mini tequenos. Sides run to arroz con gandules, mamposteao and maduros.
