Real food, ordered at a counter and eaten in a bright room: Carrot Express has run that formula in Miami since 1993, when Mario Laufer opened the first one inside a Miami Beach gas station. The menu is unusually wide, taking in acai bowls, gluten-free carrot waffles, huevos rancheros burritos, Greek and Caesar salads, poke wraps, miso salmon and vegan picadillo bowls, veggie and salmon burgers, loaded sweet potatoes, tostones and yuca chips. Vegans, pescatarians and committed carnivores all find something. Regulars praise the ingredient quality and the speed. Dine in, take it out, or send it to the office.
