Miami is where Carrot Express started and where it remains thickest on the ground, with counters in Brickell, downtown, Midtown, Coconut Grove and beyond. Founder Mario Laufer opened the first inside a Miami Beach gas station in 1993; the chain now runs close to thirty rooms across South Florida and New York. The menu is broad and unusually honest about it: acai bowls, all-day breakfast, power bowls, pita melts, healthy burgers, loaded sweet potatoes, vegan soups, cold-pressed juices, wellness shots and barista coffee. Everything is built fresh to order. Dine in, take out, order delivery, or book the catering arm.
